2 cups dry lentils, sorted and rinsed
1 medium-size onion, chopped
1/2 cup chopped celery
2 garlic cloves, minced
1 cup cooked, chopped ham
1/2 cup chopped carrots
1 cup diced tomatoes
1 tsp dried marjoram
1/2 tsp salt
1/4 tsp black pepper
1 tsp ground coriander
3 cups water
fresh cilantro sprigs for garnish, if desired
Place all ingredients in a crockpot or slow cooker; stir to blend.
Place lid on cooker and cook on low setting for approximately 8 hours.
Note: Check cooker after about 5 hours. If the mixture is getting too dry, you can add another cup of water.
Yield: Approximately 6 servings
