1 lb lean ground beef
1 large onion, chopped
2 small potatoes, peeled and cubed
2 carrots, pared and sliced
2 celery stalks, sliced
1 can (28-oz) whole tomatoes
1 cup shredded cabbage
1 small bay leaf
1 tsp salt
1/4 tsp dried thyme
1/4 tsp dried basil
1/4 tsp freshly ground black pepper
Grated mozzarella or Parmesan cheese for serving
Combine all ingredients except the cheese in a crock pot or slow cooker; mix together completely. Add enough water to cover all the ingredients.
Place lid on cooker and cook on low 8 to 12 hours or on high 3 to 5 hours. Stir well before ladling up to serve.
Ladle into serving bowls and top with the cheese.
