WELCOME

Welcome to this slow cooker/crockpot blog. I believe slow cookers are the best thing to happen to modern day cooks. I used mine often when I worked outside the home and continue to do so even in retirement. It is so nice to put food on and forget about it. Slow cookers also allow us to cook many things we would normally have to use the oven for; what a relief in hot Texas weather! Some of these recipes are mine, many are ones I have collected over the years.

RED POTATO SOUP

 

10 red potatoes, cubed or chunked
1 large onion, diced and sauteed in butter
5 cups water
3 tbsp chicken bouillon
1 tsp minced garlic
1 tbsp dry Ranch dressing mix
2 tsp dried parsley
salt to taste
freshly ground black pepper to taste
1 pkg (3-oz) real bacon bits
1 cup cream
1 cup grated cheddar cheese
1 cup sour cream
1/4 cup chopped green onion

In a slow cooker, put the potatoes, onion, water, bouillon, garlic, Ranch dressing mix, parsley, salt, pepper, and bacon bits; stir to blend.

Place lid on cooker and cook on low for 8 hours or on high for 4 hours or until potatoes are tender.

Stir in the remaining ingredients and heat through.

Yield: 8 to 10 servings
