WELCOME

Welcome to this slow cooker/crockpot blog. I believe slow cookers are the best thing to happen to modern day cooks. I used mine often when I worked outside the home and continue to do so even in retirement. It is so nice to put food on and forget about it. Slow cookers also allow us to cook many things we would normally have to use the oven for; what a relief in hot Texas weather! Some of these recipes are mine, many are ones I have collected over the years.

STEAK FAJITAS

 

1 lb beef flank steak

1 medium onion, cut into thin strips
1/2 cup medium (or hot, if you prefer) salsa
2 tbsp chopped fresh cilantro
2 tbsp fresh lime juice
2 garlic cloves, minced
1 tbsp chili powder
1 tsp ground cumin
1/2 tsp salt
1 small-size green bell pepper, cut into strips
1 small-size red bell pepper, cut into strips
8 flour tortillas, warmed
Additional salsa for serving

Cut steak lengthwise in half then cut crosswise into thin strips. Place meat in slow cooker.

Combine the onion, salsa, cilantro, lime juice, garlic, and spices in a bowl; put over meat in the cooker.

Place lid on cooker and cook on low 6 hours; add peppers and cook another hour.

Place mixture inside the tortillas and garnish with additional salsa.

Yield: 4 servings of 2 fajitas
