WELCOME

Welcome to this slow cooker/crockpot blog. I believe slow cookers are the best thing to happen to modern day cooks. I used mine often when I worked outside the home and continue to do so even in retirement. It is so nice to put food on and forget about it. Slow cookers also allow us to cook many things we would normally have to use the oven for; what a relief in hot Texas weather! Some of these recipes are mine, many are ones I have collected over the years.

CROCK POT DRESSING


1 cup butter, melted
2 cups chopped onion
2 cups chopped celery
1/2 cup chopped parsley
2 cups mushrooms (drain if using canned)
2 eggs beaten
3 1/2 to 4 1/2 cups chicken broth (enough to moisten well)
13 cups cubed dry bread
1 1/2 tsp poultry seasoning
2 tsp salt
2 tsp sage
1 tsp thyme
1 tsp pepper
1/2 tsp marjoram, optional

Melt butter in a large skillet and saute onion and celery until softened. Mix with the remaining ingredients and toss together well. Pack in a large crock pot. Add lid and cook on high for 45 minutes then turn down to low and cook 6 to 8 hours.

CHICKEN STUFFING

Note: This is just as good with turkey and is a good way to use up leftover holiday turkey.


1 pkg (12-serving size) chicken stuffing mix
3 cans (10 3/4-oz each) cream of chicken soup
3 to 4 cups cooked, cubed chicken
1/2 cup milk
2 cups shredded milk Cheddar cheese

Prepare the stuffing mix according to the package directions and place in a 5-quart crock pot/slow cooker. Stir in 2 cans of the cream of chicken soup.

In a mixing bowl, stir together the remaining can of soup, chicken, and milk.  Spread this mixture over the stuffing mixture in the cooker.  Sprinkle the cheese over all.

Place lid on cooker and cook on low 4 to 6 hours or on high 2 to 3 hours.

SWEET POTATO STUFFING


1/2 cup chopped celery
1/2 cup chopped onions
1 tbsp canola oil
6 cups dry bread cubes
1 large sweet potato, peeled & cubed
1/2 cup chicken broth
1/4 cup chopped pecans
1/2 tsp poultry seasoning
1/2 tsp rubbed sage
1/4 tsp salt
1/4 tsp freshly ground black pepper

Heat the canola oil in a skillet; add the celery and onions.  Sauté vegetables until tender.

Spray the inside of the slow cooker or crockpot with some nonstick cooking spray.  Transfer the skillet mixture into the cooker.  Add the bread cubes, sweet potato, broth, pecans, and the seasoning to the cooker; toss gently.

Place lid on cooker and cook on low 4 hours.

Yield: 8 servings

EASY SQUASH STUFFING

 

Note: This recipe and picture are from a quite old TOH. I have had this recipe several years.
  • 1/4 cup all-purpose flour
  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • 1 cup (8 ounces) sour cream
  • 2 medium yellow summer squash, cut into 1/2-inch slices
  • 1 small onion, chopped
  • 1 cup shredded carrots
  • 1 package (8 ounces) stuffing mix
  • 1/2 cup butter, melted
  • In a large bowl, combine the flour, soup and sour cream. Add the vegetables and gently stir to coat.
  • Combine stuffing mix and butter; sprinkle half into a 3-qt. slow cooker. Top with vegetable mixture and remaining stuffing mixture. Cover and cook on low for 2-3 hours or until vegetables are tender. 
  • Yield: 8 servings.

STUFFING MADE WITH APPLESAUCE

1 stick (1/2 cup) butter

1 cup chopped walnuts or pecans
2 yellow onions, chopped
1 pkg (14-oz) cubed herb stuffing mix
1 1/2 cups no-sugar-added applesauce
1 cup water
Nonstick cooking spray

Melt 2 tablespoons of the butter in a large skillet over medium heat; add the nuts and cook, stirring often, for 5 minutes to toast. Remove nuts to a small dish and set aside.

Add the remaining butter to the skillet, add onion and saute until tender, 3 to 4 minutes.

Spray the inside of a 4 to 6-quart slow cooker with the cooking spray.

Spread the stuffing mix over bottom of cooker; add the butter/onion mixture and stir to combine.

Add the applesauce and water to the cooker and stir gently to combine.

Place lid on cooker and cook on low 4 to 5 hours.

Before serving, sprinkle the toasted nuts over all.

Note: Add some cooked shredded turkey or chicken, if desired.

EASY CHICKEN AND STUFFING

 

4 boneless skinless chicken breast halves

1 can condensed cream of chicken soup
1/2 cup sour cream
1 box (6-oz) stuffing mix

Very lightly spray crock-pot or slow  cooker with nonstick canola or olive oil cooking spray.

Lay chicken in the bottom of the cooker.

Sprinkle the stuffing mix over the chicken.

In a mixing bowl combine the soup and sour cream; pour over the stuffing mix.

Place lid on cooker.

Cook on low setting 4 hours or until chicken is cooked through.

Yield: 4 servings
