Welcome to this slow cooker/crockpot blog. I believe slow cookers are the best thing to happen to modern day cooks. I used mine often when I worked outside the home and continue to do so even in retirement. It is so nice to put food on and forget about it. Slow cookers also allow us to cook many things we would normally have to use the oven for; what a relief in hot Texas weather! Some of these recipes are mine, many are ones I have collected over the years.

CAJUN-SEASONED VEGETARIAN GUMBO

2 cans (15-oz each) reduced-sodium black beans, rinsed and drained

1 can (28-oz) diced fire-roasted tomatoes, undrained 

1 pkg (14.4-oz) frozen sweet pepper and onion stir-fry vegetables

2 cups frozen cut okra

1 1/2 to 2 tsp Cajun seasoning 

Hot cooked brown rice or farro, optional

Combine beans, tomatoes, frozen stir-fry vegetables, frozen okra and seasoning in a 3 1/2 to 4 1/2-quart slow cooker. Cover cooker and cool ln low 6 to 8 hours or on high 3 to 4 hours.

If desired, serve over the hot cooked brown rice or farro.

Yield: 6 servings
