WELCOME

Welcome to this slow cooker/crockpot blog. I believe slow cookers are the best thing to happen to modern day cooks. I used mine often when I worked outside the home and continue to do so even in retirement. It is so nice to put food on and forget about it. Slow cookers also allow us to cook many things we would normally have to use the oven for; what a relief in hot Texas weather! Some of these recipes are mine, many are ones I have collected over the years.

VENISON STEW

2 lb venison stew meat in 1-inch cubes
salt
pepper
1 tbsp butter
3 stalks celery, cut diagonally into 1/2 to 1-inch pieces
1/2 cup chopped onion
2 garlic cloves, minced
1 tbsp chopped parsley or 1 tsp dried parsley flakes
1/2 cup water
1/2 cup red cooking wine
1 can (8-oz) tomato sauce
1 pkg (10-oz) frozen whole kernel corn, thawed

Sprinkle the meat cubes with salt and pepper. 

Melt the butter in a large nonstick skillet; add the meat and brown lightly on all sides.

Place the celery and onion in the crockpot or slow cooker; add meat over the veggies.  Sprinkle with the parsley flakes.

In a mixing bowl stir the water, wine, and tomato sauce together until blended.  Pour mixture into the cooker.  Add the corn.

Place the lid on the cooker and cook on low setting for 8 to 12 hours or on high setting for 4 to 6 hours, stirring occasionally.

Serving suggestion:  Serve with hot butter noodles or brown rice.

SLOW-COOKED GOOSE

This is a recipe from a hunting lodge in Canada where it is a favorite.

1/2 cup soy sauce

4 tsp vegetable oil 

4 tsp lemon juice

2 tsp Worcestershire sauce

1 tsp garlic powder

2 lb cubed goose breast

3/4 to 1 cup all-purpose flour

1/4 cup butter or margarine

1 can (10 3/4-oz) condensed golden mushroom soup, undiluted

1 1/3 cups water

1 envelope onion soup mix

Hot cooked mashed potatoes, noodles or rice for serving

In a resealable plastic bag, combine soy sauce, oil, lemon juice, Worcestershire sauce and garlic powder; add goose, Seal and turn to coat meat. Refrigerate 4 hours or overnight.

Drain and discard marinade. Place flour in another resealable plastic bag, add goose and shake to coat. In a large skillet over medium heat, melt butter. Add goose to skillet and brown on all sides then transfer to a slow cooker.

Add the soup, water and soup mix that have been stirred together in a bowl, to the cooker. Cover and cook on high4 to 5 hours or until the meat is tender. Serve over the potatoes, noodles or rice.

VENISON SWISS STEAK

2 lb venison round steak

1/4 cup white whole-wheat flour
2 tsp salt
1/2 tsp freshly ground black pepper
1 tbsp coconut or olive oil
2 medium onions, sliced
2 celery ribs, diced
1 cup sliced carrots
2 cups fresh tomatoes, chopped*
1 tbsp Worcestershire sauce

Combine the flour, salt, and pepper in a pie plate; dredge steak in the mixture.

Heat oil in a large nonstick skillet; add the steak and brown on both sides.

Place the browned meat in a slow cooker; add the remaining ingredients to the cooker.

Place lid on cooker and cook on low for 7 to 8 hours or until meat is tender and cooked through.

*May substitute low-sugar stewed tomatoes for the fresh tomatoes.

Yield: 6 servings
Per serving: 277 calories, 14 g carbs, 39 g protein
Diabetic exchanges: .5 starch, 2 vegetables, 4 very lean meat, 1 fat

VENISON SWISS STEAK II

1 tbsp canola oil

2 lbs venison round steak
1/4 cup all-purpose flour
2 tsp salt
1/2 tsp pepper
2 medium onions, sliced
2 celery ribs, sliced
1 cup carrots, diced
2 cups stewed tomatoes
1 tbsp Worcestershire sauce

Heat the canola oil in a large nonstick skillet.

Place half the onion slices over the bottom of the slow cooker or crock pot.

Combine the flour, salt, and pepper together in a pie plate. Dredge the meat through the flour, shake off excess and brown meat on both sides in the hot oil.  Remove meat and place over onions in the slow cooker or crockpot.

Place the remaining onions, celery, and carrots over the meat.

Stir the Worcestershire sauce into the stewed tomatoes.  Pour the mixture evenly over the other ingredients in the cooker.

Place lid on cooker and cook on low for 8 to 9 hours.

VENISON ROAST INCLUDING GAME MARINADE RECIPE

 Marinade:

1/2 cup cider vinegar
2 garlic cloves, minced
2 tbsp salt
enough cold water to cover meat

Mix all ingredients together in a bowl that is just large enough to hold the roast covered with water.  Add the meat and soak overnight.  This is a good marinade for all game meats.

Roast:
1 (approx. 4 lb) venison roast
2 tbsp all-purpose flour
2 garlic cloves, minced
1 large onion, sliced
2 tbsp brown sugar
1 tbsp Worcestershire sauce
1 teaspoon prepared mustard
1/4 cup lemon juice
1 can (15-oz) diced tomatoes

Remove roast from the marinade and discard marinade.  Season the meat by sprinkling with salt and pepper.  Pour just enough canola oil into a skillet large enough to hold the roast and heat over medium-high heat until hot enough to brown meat. Dredge the meat in the flour and brown in the hot skillet. Place the roast in the crockpot or slow cooker.  Add the garlic, onion, brown sugar, Worcestershire sauce, mustard, lemon juice, and tomatoes.  Place lid on cooker and cook on high for a couple of hours.  Turn heat to low and cook for another 8 to 10 hours.

Charley's Slow Cooker Mexican Style Meat

My family loves Mexican-style foods, so I love this basic recipe for making the meat in the slow cooker. So many options with this meat. I found this on the internet time ago and I am sharing it with you! Recipe by "This recipe can be used with chicken, beef, pork and even venison. It freezes well, and can be made into burritos, tacos, or any number of other Mexican-style dishes. This dish uses a lot of spice, so please be sure to adjust to your taste."

1 (4-lb) chuck roast
1 tsp salt
1 tsp ground black pepper
2 tbsp olive oil
1 large onion, chopped
1 1/4 cup diced green chili pepper
1 tsp chili powder
1 tsp ground cayenne pepper
1 bottle (5-oz) hot pepper sauce
1 tsp garlic powder

  1. Trim the roast of any excess fat, and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Place the beef in the hot skillet, and brown it quickly on all sides.
  2. Transfer the roast to a slow cooker and top it with the chopped onion. Season with chile peppers, chili powder, cayenne pepper, hot pepper sauce, and garlic powder. Add enough water to cover 1/3 of the roast.
  3. Cover, and cook on High for 6 hours, checking to make sure there is always at least a small amount of liquid in the bottom of the cooker. Reduce heat to Low, and continue cooking for 2 to 4 hours, or until meat is totally tender and falls apart.
  4. Transfer the roast to a bowl and shred it using two forks (reserve 2 cups of cooking liquid, if desired). Serve in tacos or burritos (see Cook's Note).
  • Cook's Notes:
  • If using the meat for burritos: shred the meat and add it to a frying pan with 1 cup of the cooking liquid. Simmer until the sauce has thickened, about 15 minutes.
  • To freeze the meat, transfer it to a freezer-proof container and add reserved 2 cups of cooking liquid. Freeze up to 6 months, thaw in refrigerator or microwave.
  • This recipe also works for pork and chicken. If you're using chicken, remove the skin before cooking and reduce the cooking time to 4 hours on High or 8 hours on Low. Remove the bones and shred the meat after cooking.
