Welcome to this slow cooker/crockpot blog. I believe slow cookers are the best thing to happen to modern day cooks. I used mine often when I worked outside the home and continue to do so even in retirement. It is so nice to put food on and forget about it. Slow cookers also allow us to cook many things we would normally have to use the oven for; what a relief in hot Texas weather! Some of these recipes are mine, many are ones I have collected over the years.

LOADED BAKED POTATO SOUP FROM KRAFT

I got this recipe from Kraft Foods and it sounded so good I am sharing it before I even try it.  I love baked potato soup and Kraft's recipes are always good.  Thought some of you might be as interested as I am!  While I don't usually list name brand ingredients, since this is a Kraft recipe, I am leaving it intact.


8 slices OSCAR MAYER Bacon, chopped
1 onion, finely chopped
flour
1 carton (32 oz.) fat-free reduced-sodium chicken broth, divided
baking potato
1 pkg. (8 oz.) KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA, divided
milk
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/4 cup chopped fresh chives
 
COOK and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon, reserving 2 Tbsp. drippings in skillet. Drain bacon on paper towels; refrigerate until ready to use. Add onions to drippings in skillet; cook and stir 5 min. or until crisp-tender. Stir in flour; cook and stir 1 min. Add 1 cup broth; cook and stir 2 min. or until sauce comes to boil and thickens. Pour into slow cooker. Stir in remaining broth and potatoes; cover with lid. Cook on LOW 8 to 10 hours (or HIGH 5 to 6 hours). USE slotted spoon to transfer 4 cups potatoes to medium bowl; mash until smooth. Add 1-1/2 cups cheese to remaining mixture in slow cooker; stir until melted. Stir in mashed potatoes and milk; cook, covered, 5 min. or until heated through.
PLACE bacon on paper towel-covered microwaveable plate. Microwave on HIGH 20 to 30 sec. or until heated through. Serve soup topped with bacon, remaining cheese, sour cream and chives.

RED ONION MARMALADE

This is a recipe I saw in an old crock pot cookbook. A note with the recipe said to use as a topping on steaks and fish or spread on sourdough bread rounds to use as appetizers. I have not made this as I do not eat steak or fish.

5 large red onions, thinly sliced
4 tbsp unsalted butter
1 tbsp olive or canola oil
2 garlic cloves, minced
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp salt
1/4 tsp freshly ground black pepper
1/4 cup water
2 tbsp currant jelly

In a large skillet, caramelize the onion in the butter, oil, and garlic.  Season with the cumin, coriander, salt and pepper.  Transfer to crock pot or slow cooker and add the water and jelly; mix thoroughly to combine.  Place lid on cooker and cook on high for 1 hour.

Allow marmalade to cool before serving.  May be kept in the refrigerator for up to 4 days.

MARINATED MUSHROOMS & ARTICHOKE HEARSTS

2 lb assorted mushrooms, such as stemmed shitakes, cremini and/or button mushrooms

1 pkg (8 to 9-oz) frozen artichoke hearts

1 14.5-oc can lower-sodium beef broth

1 cup dry red wine

2 tbsp butter, cut-up

1 tbsp packed brown sugar

1 tbsp Worcestershire sauce

2 garlic cloves, minced

1 tsp dried dill

In a 5 to 6-quart slow cooker combine mushrooms and artichokes. Add the remaining ingredients. Cover and cook on low 8 to 10 hours or on high 4 to 5 hours.

Serve warm or chill and serve cold.

Yield: 16 servings.

SIMPLE SAUCY POTATOES

4 cans (14.5-oz each) sliced potatoes, drained

2 cans (10 3/4-oz each) condensed cream of celery soup, undiluted

2 cups sour cream

10 bacon strips, cooked and crumbled

6 green onions, thinly sliced

Chopped chives

Coarse black pepper

Place potatoes in a 3-quart slow cooker. Combine the first 4 ingredients, reserving 1/3 cup of bacon crumbles. Pour mixture over the potatoes and mix well. Cover and cook on high for 4 to 5 hours. 

Top with the reserved bacon, the chives and black pepper.

Yield: 12 servings of 3/4 cup each

PORK CHOPS WITH MUSHROOMS AND POTATOES

1 can cream of mushroom soup
1 can golden mushroom soup
1 pkt (1-oz) onion mushroom soup mix
1 tbsp Worcestershire sauce
1/2 cup water
1 medium to large yellow onion, sliced
3/4 lb fresh mushrooms, sliced
4 medium to large potatoes halved or quartered depending on size
4 large bone-in pork chops

In a slow cooker, combine the soups, soup mix, Worcestershire sauce and water; stir with a whisk to blend.

Add the onion, mushrooms and potatoes, stir into the mixture.

Place the chops on the veggies and turn to coat with the soup mixture.

Place lid on cooker and cook on low 6 to 7 hours.

To serve, spoon the 'gravy' mixture over the chops.

Yield: 4 servings.

SWEET ONION AND RED BELL PEPPER TOPPING

4 large (8 cups) sweet onions, thinly sliced (Vidalia onions are great for this recipe.)
4 large (6 cups) red bell peppers, thinly sliced
1/2 cup cider vinegar
1/4 cup packed brown sugar
2 tbsp honey
2 tbsp canola oil
2 tsp celery seed
3/4 tsp crushed red pepper flakes
1/2 tsp salt

In a 5 or 6-qt slow cooker, combine all ingredients. Place lid on cooker and cook on low 4 to 5 hours or until veggies are tender.

Serve with a slotted spoon.
Serving suggestions - on hot dogs, bruschetta, etc.

CHINESE VEGETABLES

1 bunch celery, sliced on the diagonal

1 large onion, sliced

1 can (14-oz) bean sprouts, drained

1 pkg (16-oz) frozen Asian vegetables

1 can (8-oz) sliced water chestnuts, drained

2 (4-oz each) cans sliced mushrooms

1 tbsp sugar

3 tbsp. low-solium soy sauce

3/4 cup water

1/4 tsp black pepper (or more to your taste)

Spray slow cooker with nonstick cooking spray.

Combine all ingredients in a slow cooker (ideally 4-quart).

Cover and cook on low 3 to 6 hours, depending on how soft or crunchy you like your veggies.

CREAMY CORN FOR A CROWD

  • 1 (32-ounce) bag frozen whole kernel corn
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1/4 cup water
  • 1 (8-ounce) package cream cheese
  • 1/2 cup butter
  • 3 to 4 strips bacon, fried crisp and crumbled, for garnish

    1. Place corn in a 4- to 5-quart slow cooker. Sprinkle corn with salt and sugar; drizzle with water. Place cream cheese and butter on top of corn mixture (do not stir).
       
    2. Cover and cook on LOW setting 4 hours. Stir well and garnish with the crumbled bacon before serving.
    This is my version of a recipe I saw from Mr. Food several years ago.

    CREAMED CORN

    • 3 (15.25-ounces) cans whole kernel corn, drained
    • 1 cup milk
    • 1 tablespoon sugar
    • 1/4 teaspoon pepper 

    • 8 ounces cream cheese, cubed
    • 1/2 cup (1 stick) unsalted butter, cut into thin slices
    • Place corn into a slow cooker. Stir in milk, sugar and pepper until well combined. Without stirring, top with butter and cream cheese. Cover and cook on high heat for 2-3 hours.
    • Uncover and stir until butter and cream cheese are well combined. Cover and cook on high heat for an additional 15 minutes.
    • Serve immediately.

    ROASTED ROOT VEGETABLES

    2 large parsnips, peeled and cut into 1/2-inch pieces
    4 large carrots, peeled and cut into 1/2-inch pieces
    6 medium Yukon Gold potatoes, peeled and cut into 1/2-inch pieces
    1 tbsp fresh tarragon, minced
    1/4 cup butter, melted
    1/2 tsp salt
    1/2 tsp pepper
    1 tsp brown sugar

    Combine all ingredients in a crock pot or slow cooker.  Stir to thoroughly coat the vegetables with the seasonings, butter, and brown sugar.

    Place lid on cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours.

    Serves 6.

    CROCKPOT STUFFED BELL PEPPERS

    6 bell peppers, green, red, or orange (washed, topped, and seeded)
    1 tbsp shortening
    1 1/2 lb ground beef
    1 cup cooked brown rice
    1 small onion, chopped
    1 tsp salt
    1/8 black pepper
    1/8 tsp basil
    1/2 cup ketchup
    1 8-oz can tomato sauce 
    Heat shortening in skillet and brown beef.  Combine meat and next 6 ingredients.  Stuff bell peppers.  Arrange peppers in large crock pot (may be stacked if necessary).  Pour tomato sauce over peppers.  Cook on low for 6-7 hours or on high for 3-4 hours.


    Personal note: Sometimes I like to use 2 red, 2 green, and 2 orange bell peppers for color and replace the ketchup and tomato sauce with a favorite pasta sauce.

    SLOW COOKER CABBAGE ROLLS

    4 cups water
    12 large cabbage leaves
    1 lb lean ground beef
    1/2 cup cooked rice
    1/2 tsp salt
    dash of freshly ground black pepper
    1/4 tsp dried thyme
    1/4 tsp nutmeg
    1/4 tsp cinnamon
    1 can (6-oz) tomato paste
    3/4 cup water

    Place the 4 cups of water into a deep pan and bring to a boil.  Remove the water from the heat and soak cabbage leaves in the hot water for 5 minutes or just until softened.  Remove from water and drain well.  Allow to cool enough to handle.

    Combine the ground beef, rice, salt, pepper, thyme, nutmeg, and cinnamon until well blended.  Place 2 tablespoons of this mixture on each cabbage leaf.  Roll up firmly and stack in the slow cooker or crockpot.

    Combine the tomato paste and 3/4 cup of water; pour over the cabbage rolls.

    Place lid on cooker and cook on low setting approximately 8 hours.
    Yield: 6 servings

    BBQ VEGGIE JOES

    1 cup chopped carrots

    2/3 cup brown lentils, rinsed and drained

    2.3 cup uncooked regular brown rice

    1/2 cup chopped onion

    2 tbsp packed brown sugar

    2 tbsp yellow mustard

    1/2 tsp salt

    1 garlic clove, minced

    1/4 to 1/2 tsp cayenne pepper

    2 14.5-oz cans vegetable broth (may use chicken broth)

    1 8-oz pkg portobella mushrooms, chopped

    1 15-oz can tomato sauce

    2 tbsp cider vinegar

    8 French-style rolls or whole wheat hamburger buns, split and toasted

    Assorted toppers ie chopped tomato coarsely shredded iceberg lettuce or red onion slices

    In a slow cooker, combine carrots, lentils, uncooked brown rice, onion, brown sugar, mustard, salt, garlic, and cayenne pepper. Stir in broth.

    Place cover on cooker and cook on high3 to 3 1/2 hours. Stir in mushrooms, tomato sauce, and vinegar. Replace cover and cook on high for 30 minutes.

    Use a slotted spoon to spoon mixture onto buns. Add any desired toppers.

    COPYCAT CRACKER BARREL CARROTS


    Add the carrots, butter, both sugars, garlic powder, salt and water to the cooker.
    Place lid on cooker and cook on high 3 hours or on low 6 hours. Drain liquid before serving.

    RANCH HOUSE CROCK POT PORK CHOPS WITH PARMESAN MASHED POTATOES

    I saw this today on a friend's facebook page.  It sounds good so I am going to try it and I thought some of you might like it, too.  Being diabetic I will leave off the mashed potatoes (no doubt the best part!).

    6 pork chops, 1/2 inch thick
    1 packet dry Ranch Dressing Seasoning
    10 oz can Cream of Chicken Soup
    4 lbs peeled, cubed potatoes
    5 Tablespoons real butter
    1 cup fresh grated Parmesan cheese
    6 cloves roasted garlic (directions are below)
    1- 1 1/2 Cups warm skim milk (any milk will do, I used skim)
    1 Tablespoon salt, or to taste
    1 teaspoon fresh cracked black pepper, or to taste

    Place pork chops, Ranch seasoning and soup into a medium sized crock pot over high heat for 4 hours or low heat for 6 hours.
    Place potatoes into a large pot of cold water. Place onto stove top over high heat and bring to a boil. Once water is boiling, cook for 10-12 minutes or until potatoes are fork tender. Drain and transfer to the work bowl of a stand or electric mixer. Mix on low until potatoes are mashed then add butter, Parmesan, garlic, milk, salt and pepper. Season to taste if needed. For thinner mashed potatoes add more milk, slowly until your desired consistency.
    Scoop mashed potatoes onto serving plates and top with pork chops and soup gravy from crock pot. I put a little parsley on top to serve.

    Roasted Garlic

    Preheat oven to 350 degrees F. Place bulb of garlic with skins on, wrap lightly in tin foil and bake for 1 hour. Remove from foil and let cool for 15 minutes. Remove garlic from skins, place in a bowl and mash with a fork until completely mashed. Set aside. One garlic bulb will have around 12 cloves.

    SWEET SPICY SLOW COOKER BAKED BEANS

    Slow Cooker Baked Beans

    Serves 8

    A slow cooker baked bean recipe that is sweet, spicy and loaded with flavor.

    Ingredients
    4 slices cooked bacon - crumbled
    2 cups dry navy beans - soaked and drained
    1 onion - chopped
    3 tbsp molasses
    2 tbsp ketchup
    3 tbsp brown sugar
    2 tbsp. minced garlic
    1 tbsp mustard
    1 tsp salt
    1 tsp pepper
    1/2 tsp cayenne pepper
    4 1/2 cups water

    Instructions

    Fill a large bowl with water to cover the beans with 1/2 inch-1 inch of water. Soak for at least 6 hours but overnight is best.

    Pick out the ones that float to the top, drain and rinse

    Cook bacon and crumble

    In a large bowl combine remaining ingredients, taste and adjust seasoning if needed

    In a large slow cooker place beans and sauce and stir gently

    Cook on low for 8 hours, check and continue cooking until desired consistency is reached. We cooked ours for 9 hours.

    SLOW COOKER VEGETABLE LASAGNA

    3/4 lb zucchini, thinly sliced
    1/2 lb sliced mushrooms
    1 red bell pepper, diced
    1 carton (15-oz) part-skim ricotta cheese
    1 pkg (8-oz) shredded mozzarella cheese
    1/4 cup chopped fresh parsley
    2 garlic cloves, chopped
    1/4 tsp freshly ground black pepper
    1 jar (26-oz) prepared pasta sauce with garlic
    1/2 cup water
    8 lasagna noodles, break into half
    1/4 cup grated Parmesan cheese

    Lightly spray the inside of the cooker with nonstick cooking spray.

    In a large bowl combine the slliced zucchini, sliced mushrooms, and the diced bell pepper; set aside.

    Combine the ricotta cheese, 1 cup of the shredded mozzarella cheese, parsly, garlic, and pepper; set aside.

    Spread a half cup of the pasta sauce over the bottom of the cooker.  Top with 4 of the noodle halves, overlapping if needed.

    Blend 3/4 cup of the pasta sauce with the water; set aside.

    Stir the rest of the pasta sauce along with 2 tablespoons of the Parmesan cheese into the vegetable mixture.  Layer half of the mixture over the lasagna noodles.  Top mixture with the another 4 halves of the lasagna noodles.  Spread the ricotta cheese mixture over noodles and top with 4 more noodle halves. Top with the remaining vegetable mixture and top with the last 4 noodle halves.  Spread the pasta sauce/water mixture over the top.

    Place the cover on the cooker and cook on low for 6 to 7 hours or on high about 4 1/2 hours.  During the last 10 minutes of the cooking time, sprinkle the last cup of the mozzarella cheese and the fourth cup of the of the Parmesan cheese over the top.

    Remove lasagna from the heat (if that is possible with your cooker) and let set for 10 to 15 minutes before cutting to serve.
    Yield: 6 to 8 servings.

    BUTTERNUT SQUASH WITH CORN AND TOMATOES

    1 butternut squash (approx. 2 lb) peeled, seeded, diced
    1 can (14.5-oz) tomatoes, including juice
    1 can (15-oz) whole-kernel corn, drained
    1 medium onion, coarsely chopped
    1 garlic clove, minced
    1 green bell pepper, seeded and cut into 1-inch pieces
    1 canned green chili, coarsely chopped
    1/2 cup chicken (or vegetable for vegetarians) broth
    1/2 tsp salt
    1/4 tsp black pepper
    1 1/2 tbsp tomato paste

    Combine everything except the tomato paste in a slow cooker or crockpot.  Place lid on cooker and cook on low for 6 hours or until the squash is tender.

    Remove 1/4 cup of the cooking liquid and mix with the tomato paste; stir into the cooker.  Cook another half hour or so until the mixture is slightly thickened and heat through.

    Yield: 6 to 8 servings

    BEEF AND VEGGIES IN RICH SAUCE

    1 pkg (8-oz) baby carrots
    1 pkg (8-oz) sliced fresh mushrooms
    1 medium-size green bell pepper, cut into strips
    1 ( 2 1/2 to 3 lb) boneless beef chuck roast
    1 can condensed golden mushroom soup, do not dilute
    1/4 cup beef broth
    1 tbsp Worcestershire sauce
    1 packet (1-oz) dry onion soup mix
    1/4 tsp freshly ground black pepper
    3 tbsp cornstarch
    2 tbsp water
    4 cups hot cooked buttered noodles for serving, optional
    Chopped fresh parsley (or cilantro), for garnish, optional

    Place veggies in slow cooker and place the roast over veggies.

    Combine the mushroom soup, broth, Worcestershire, onion soup mix, and pepper in a mixing bowl; mix together well. Pour mixture over the roast and veggies.

    Place lid on cooker and cook on low setting 8 to 10 hours until meat is tender.

    Remove roast to a cutting board and cover with foil. Allow to stand 10 to 15 minutes before slicing.

    Meanwhile, blend the cornstarch in the water until smooth (a small whisk works great); stir into the cooker. Cook another 15 minutes or until broth is thickened.

    To serve, place the sliced beef and veggies with gravy over the noodles. Garnish with the parsley or cilantro, if desired.

    Yield: Approximately 8 servings
