Welcome to this slow cooker/crockpot blog. I believe slow cookers are the best thing to happen to modern day cooks. I used mine often when I worked outside the home and continue to do so even in retirement. It is so nice to put food on and forget about it. Slow cookers also allow us to cook many things we would normally have to use the oven for; what a relief in hot Texas weather! Some of these recipes are mine, many are ones I have collected over the years.

SLOW COOKER TACO SOUP

1 1/2 lbs ground beef (may substitute ground turkey or chicken) 

1 cup chopped red onion

1 pkg (1.25-oz) taco seasoning mix

1 pkg (1-oz) Ranch-style dressing mix

2 cans whole kernel corn, undrained

1 can pinto beans, undrained

1 can black beans, undrained

2 (10-oz ea) cans chili-style diced tomatoes with green chilies, undrained

1 1/2 cup water

Topping suggestions: Shredded cheese, sour cream, tortilla chips, cilantro, avocado slices

Cook the meat and onion over medium-high heat in a large skillet until browned, stirring to break up, drain well.

Combine the meat mixture with the remaining ingredients, except toppings, in a 5 1/2-quart slow cooker. Cover and cook on low heat 5 to 6 hours. Serve with your choice of toppings.

Yield: 16 cups

DOLLY PARTON'S STAMPEDE SOUP

So many of us have had Dolly Parton on our minds since her passing last week. I thought you might like to try her Stampede Soup. I got to visit Dolly's Stampede Show in Gatlinburg not too long ago. I really enjoyed the show and the food was good, too. Here is a recipe said to be hers. It may or may not be, but it sounds good.

PAULA DEEN'S CROCK POT POTATO SOUP

1 bag hash browns

2 cans chicken broth
1 can cream of chicken soup
1/2 cup chopped onion
1/3 tsp black pepper
1 8-oz block cream cheese

Combine the hash browns, chicken broth, soup, onion, and pepper together in the crockpot/slow cooker. Place lid on cooker and cook for 5 hours on low.

Stir in the cream cheese and cook for another 30 minutes, stirring occasionally.

LOADED BAKED POTATO SOUP FROM KRAFT

I got this recipe from Kraft Foods and it sounded so good I am sharing it before I even try it.  I love baked potato soup and Kraft's recipes are always good.  Thought some of you might be as interested as I am!  While I don't usually list name brand ingredients, since this is a Kraft recipe, I am leaving it intact.


8 slices OSCAR MAYER Bacon, chopped
1 onion, finely chopped
flour
1 carton (32 oz.) fat-free reduced-sodium chicken broth, divided
baking potato
1 pkg. (8 oz.) KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA, divided
milk
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
1/4 cup chopped fresh chives
 
COOK and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon, reserving 2 Tbsp. drippings in skillet. Drain bacon on paper towels; refrigerate until ready to use. Add onions to drippings in skillet; cook and stir 5 min. or until crisp-tender. Stir in flour; cook and stir 1 min. Add 1 cup broth; cook and stir 2 min. or until sauce comes to boil and thickens. Pour into slow cooker. Stir in remaining broth and potatoes; cover with lid. Cook on LOW 8 to 10 hours (or HIGH 5 to 6 hours). USE slotted spoon to transfer 4 cups potatoes to medium bowl; mash until smooth. Add 1-1/2 cups cheese to remaining mixture in slow cooker; stir until melted. Stir in mashed potatoes and milk; cook, covered, 5 min. or until heated through.
PLACE bacon on paper towel-covered microwaveable plate. Microwave on HIGH 20 to 30 sec. or until heated through. Serve soup topped with bacon, remaining cheese, sour cream and chives.

BASIC CHICKEN NOODLE SOUP

2 bone-in chicken breasts, skinned
1 onion, chopped
3 celery stalks, sliced
2 carrots, sliced
6 sprigs fresh parsley
2 garlic cloves, peeled
1 bay leaf
1 tsp dried thyme or 1 tbsp chopped fresh thyme
1/2 tsp salt
1/4 tsp black pepper
2 cartons (32-oz each) low-sodium chicken broth
1 1/2 cups egg noodles
1/4 cup chopped fresh dill, optional

In a 5 or 6 -quart slow cooker or crockpot combine the chicken, onion, celery, carrots, parsley, garlic, bay leaf, thyme, salt and pepper. Pour the chicken broth over the mixture. Cover and cook on high for 4 to 5 hours or low for 8 to 10 hours.

Remove the parsley, garlic, and bay leaf using a slotted spoon; discard. Transfer the chicken to a cutting board; let stand for 10 minutes or until cool enough to handle. Remove the bones and discard. Cut or shred chicken into bite-size pieces.

While chicken cools, cook the noodles according to the package directions. Stir the chicken back into the cooker along with the prepared noodles. Replace lid and cook on high until the chicken is hot, approximately 5 minutes.

To serve, sprinkle with the dill if desired.

CHEESY POTATO SOUP

6 cups peeled and chopped potatoes
2 1/2 cups water
1/2 cup chopped yellow onion
2 tsp instant chicken bouillon granules
1/4 to 1/2 tsp freshly ground black pepper
1 1/2 cups shredded American cheese
1 can (12-oz) evaporated milk
4 strips bacon, fried, drained on paper towels, crumbled, for garnish
Thin sliced green onion for garnish

In a 3 1/2 to 4-qt slow cooker or crock pot, combine the potatoes, water, yellow onion, bouillon, and pepper. Place lid on cooker and cook on low 8 to 9 hours or on high 4 to 4 1/2 hours.

Stir the cheese and milk into the soup and continue to cook 1 hour on low or 30 minutes on high.  Smash potatoes slightly if you like a thicker soup.

Ladle into soup bowls and top with crumbled bacon and green onions.

Yield: 4 servings.

LOADED BAKED POTATO SOUP

  • 30 ounces bag frozen, shredded hash browns
  • 10 3/4 ounces cream of chicken soup
  • 32 ounces chicken broth
  • med. onion, diced
  • 1 teaspoon freshly-ground black pepper
  • 8 ounces Neufchatel cream cheese
  • 1 cup cooked, crumbled bacon
  • 1 cup shredded cheddar cheese
  • 1 cup chopped chives or green onions
  • 1 cup sour cream
  • Place the first five ingredients (through the black pepper) in the slow-cooker.
  • Cook on low for 6 to 8 hours.
  • One hour before you’re ready to eat, add the cream cheese.
  • Let it melt, then stir to fully blend.
  • When serving, top with crumbled bacon, chives, shredded cheese and sour cream, if desired.
  • This recipe is one I received through email from the Real Women of Philadelphia (KRAFT Foods).

LENTIL & CANADIAN BACON SOUP

4 cups water

1/2 tsp salt

1/4 tsp pepper

1 tsp thyme

2 cans vegetable broth

2 medium carrots, cut into 2-inch pieces

 1 cup chopped potato

1 medium onion, chopped

1 stalk celery, cut into small pieces

1 16-oz pkg dried lentils, sorted and rinsed

6-oz Canadian bacon, chopped

Mix all ingredients in a slow cooker. Cover and cook on low setting 8 to 9 hours or until the lentils are tender. Stir well before serving. Garnish with sour cream, if desired

SLOW COOKER NAVY BEAN SOUP

Ingredients

1 lb of dry white beans soaked and drained (navy or northern)
2 lb of meat (ground beef, chicken, turkey, sausage (I used 1lb italian sausageand 1 lb ground chicken)
1/2 c chopped onion
10 c chicken stock or bullion
1 can cream of onion soup
1/2 c grated carrot
Season to taste
Instructions
Brown meat
Add all ingredients to a 7-8 qt slow cooker and cook on low for 6-8 hours.
This may be divided for smaller quantities and smaller slow cookers.

CHICKEN GNOCCHI SOUP

2 15-oz jars Alfredo sauce
  1. 2 cups water
  2. 2 cups cooked, cubed chicken
  3. 2 16-oz. pkgs potato gnocchi
  4. 2 cans chopped spinach
  5. 1 can creamed corn
  6. 1 10-oz evaporated milk
    
    Add all ingredients except gnocchi to the slow cooker and combine well.
  1. Cook on high for 2 hours or low 4 hours.
  2. Add gnocchi to soup and combine well. Cook for 1 hour longer on low.
  3. Fills a 6 qt slow cooker to capacity. Cut recipe in half for a 4 qt. cooker.

Note: If you have leftovers to warm later, add a little water.  Soup thickens when it sits.

As you know, I am not a chicken eater.  I saw this recipe and thought my family would like it and you might want it, too.  I cannot give my opinion of this recipe either good or bad.  This recipe is from Marty's Musings.

CROCKIN' GIRLS CHICKEN SOUP

This recipe is from the Crockin' Girls in 2013.  I friend of mine recommended this.  As you all know if you follow my blog, I don't eat chicken.  However, I get more requests for chicken dishes than any other so here you are: 

  • 4 Chicken Breasts (boneless, skinless)
  • 2 Tablespoons Butter
  • 1 Can Cream of Chicken Soup
  • 1 Can Cream of Celery Soup
  • 3 1/2 Cups Chicken Broth
  • 1 Onion, finely diced
  • 1 Cup Celery, diced
  • 1 Cup Carrots, diced
  • 2 Chicken bouillon cube
  • 10 Ounces Can of Biscuits, but you can make your own

EXCLUDING THE BISCUITS put all ingredients in, then cover and cook on LOW for 8 hours.

  1. About an hour (give or take) before serving, remove chicken and pull into pieces and return to the soup mixture.

  2. Place the torn biscuit dough in and cook until the dough is no longer raw in the center.

CHEESY MACARONI AND CHICKEN SOUP

3 1/2 cups low-sodium chicken broth 
1 (16-ounce) package frozen mixed vegetables 
1 (10.75-ounce) can cream of chicken soup, undiluted 
2 cups chopped cooked chicken 
1 (16-ounce) package pasteurized prepared cheese product, cubed 
1 (20-ounce) package frozen macaroni and cheese

In a 5- to 6-quart slow cooker, combine chicken broth, mixed vegetables, cream of chicken soup, and cooked chicken.

Cover and cook on LOW setting 4 hours. Add cheese and frozen macaroni and cheese. Cover and cook on LOW setting 2 additional hours, or until cheese melts and soup is thoroughly heated.

To keep this recipe really easy, you can use leftover cooked chicken or a rotisserie chicken.

VEGETABLE SOUP WITH GROUND BEEF ATLANTA-STYLE

1 lb lean ground beef
1 cup chopped onion
1 garlic clove, minced
1 can (15-oz) kidney beans, rinsed
1 cup sliced carrots
1 cup sliced celery
1/4 cup uncooked rice
2 cans (16-oz each) stewed tomatoes
3 1/2 cups water
5 beef bouillon cubes
1 tbsp chopped parsley
1 tsp salt
1/4 tsp basil
1/8 tsp black pepper
1 cup fresh or frozen green beans

Cook the beef in a skillet with the onion and garlic until beef is browned, stirring to break up the meat.  Drain of the excess fat.  Place the meat into a slow cooker or crock pot.  Add the kidney beans, carrots, celery, rice, tomatoes, water, bouillon, parsley, salt, basil, pepper, and green beans if using fresh. (If using frozen green beans, add during the last hour of cooking.)  Stir mixture to combine well.

Place the lid on the cooker and cook on low for 8 hours.

WISCONSIN BEER AND CHEESE SOUP

Note: I have never made this soup but it has been recommended as a good one for those of you who have asked for a beer/cheese soup.

2 to 3 slices pumpernickel or rye bread
1 can (14.5-oz) chicken broth
1 cup light-tasting beer
1/4 cup finely chopped onion
2 garlic cloves, minced
3/4 tsp dried thyme
6-oz  American cheese, shredded
4 to 6-oz sharp Cheddar cheese, shredded
1 cup milk
1/2 tsp paprika

Preheat oven to 425 degrees.

Slice bread into 1/2-inch cubes and place on a baking sheet.  Bake at 425 degrees for around 10 minutes or until crisp, stirring once. Set your homemade croutons aside.

In a 4 1/2-quart crockpot or slow cooker, combine the broth, beer, onion, garlic, and thyme; cover and cook on low for 4 hours.

Turn cooker to high.  Stir in the cheeses, milk, and paprika.  Cover and cook for another 45 minutes to 1 hour or until the soup is hot and the cheeses are melted.  Stir soup well the blend in the cheeses.  Ladle soup into bowls and top with the homemade croutons.

CHICKEN AND WILD RICE SOUP

A good soup recipe for the cold days of Winter. 

1/2 cup uncooked wild rice, rinsed
1/2 cup shredded carrot
3 cans (14-oz each) chicken broth
1 lb boneless, skinless chicken breast, cut into 1-inch pieces
1/2 cup celery, chopped
1/2 cup yellow onion, chopped
1 cup sour cream
1/2 cup white whole-wheat flour
1/2 cup sliced toasted almonds, optional

In slow cooker/crock pot, combine the rice, carrot, broth, chicken, celery, and onion.

Place lid on cooker and cook on low 6 to 8 hours or on high 4 to 6 hours until the chicken and rice are tender.

Before serving, stir the sour cream and flour together until smooth.  With the cooker on high heat setting, stir the sour cream mixture into the soup, stirring constantly.  Replace lid and continue to cook 5 to 10 minutes, stirring often, until the soup starts to thicken and is creamy.

Ladle into soup bowls and top with the almonds, if using.

Serves 6 to 8.

PASTA FAGIOLI IN THE CROCKPOT~ just like Olive Garden

2 lbs ground beef
1 onion, chopped
3 carrots, chopped
4 stalks celery, chopped
2 (28 ounce) cans diced tomatoes, undrained
1 (16 ounce) can red kidney beans, drained
1 (16 ounce) can white kidney beans, drained
3 (10 ounce) cans beef stock
3 teaspoons oregano
2 teaspoons pepper
5 teaspoons parsley
1 teaspoon Tabasco sauce (optional)
1 (20 ounce) jar spaghetti sauce
8 ounces pasta


Brown beef in a skillet.
Drain fat from beef and add to crock pot with everything except pasta.
Cook on low 7-8 hours or high 4-5 hours. Add pasta the last 30 minutes.


Note: A friend sent me this recipe. My family and friends know I love Olive Garden's Pasta Fagioli.

CREAMY CHICKEN NOODLE SOUP

2 cans condensed cream of chicken and mushroom soup

5 cups water

2 cups chopped cooked chicken 

1 pkg (10-oz) frozen mixed vegetables

1 tsp garlic-pepper seasoning

1 1/2 cups egg noodles

Combine the soup and water in a crock-pot or slow cooker. Stir in the chicken, frozen vegetables and the seasoning. Cover and cook on low 6-8 hours or on high 3 to 4 hours.

If using low setting, turn heat to high. Stir the uncooked noodles into the soup mixture and cook on high 20 to 30 minutes or until noodles are tender.

Yield: 6 to 8 servings

BARLEY-BEEF (OR LAMB) SOUP

12-oz lamb or beef stew meat

1 tbsp olive oil

4 cans (14.5-oz each) lower-sodium beef broth

1 can (14.5-oz) diced tomatoes, do not drain

1 cup chopped onion

1 cup peeled parsnip or potato, cut into bite size pieces

1 cup frozen mixed vegetables

2/3 cup regular barley

1/2 cup chopped celery

1 bay leaf

2 garlic cloves, minced

1 tsp dried oregano or basil

1/4 tsp ground black pepper

Trim fat from meat. Cut into 1-inch size pieces. Heat oil in a large skillet and cook meat over medium-high heat until browned. Drain. Transfer to 5 to 6-quart slow cooker.

Add broth, tomatoes, onion, parsnip, frozen vegetables, barley, celery, bay leaf, garlic, oregano, and pepper. c

Cover and cook on low setting 8 to 10 hours or on high setting 4 to 5 hours. Remove and discard bay leaf before serving.

Yield: 8 servings

RED BEANS AND RICE SOUP BY ROBIN HAAS

I got the recipe several years ago from a fellow blogger.  This recipe should work for most diabetics, too.

Red Beans & Rice Soup
A healthy vegetarian soup loaded with beans, veggies and brown rice--just combine all the ingredients in your crock pot and top with green onions and tomatoes.
Ingredients:
2× 15 oz cansSmall Red Beans, rinsed and drained well
¾ cupBrown Rice
1Medium Onion, finely diced
1 stalkCelery, finely chopped
1 tspBlack Pepper
½ tspSalt
1 tspGround Cumin
6 cupsLow Fat Low Sodium Vegetable Broth
3-4Green Onions, chopped
1Medium Tomato, chopped and drained


Directions:
Mash one can of beans with a fork and combine all ingredients, except the green onions and tomato, into a crock pot. Cover, cook on low for 5-6 hours, or until the rice is tender. Ladle into bowls and sprinkle with green onions and chopped tomato.

Yield: 6 servings
