Welcome to this slow cooker/crockpot blog. I believe slow cookers are the best thing to happen to modern day cooks. I used mine often when I worked outside the home and continue to do so even in retirement. It is so nice to put food on and forget about it. Slow cookers also allow us to cook many things we would normally have to use the oven for; what a relief in hot Texas weather! Some of these recipes are mine, many are ones I have collected over the years.

CROCKPOT RANCH PORK CHOPS

PORK MARENGO

2 lbs boneless pork shoulder, cubed
1/2 cup chopped yellow onion
2 tbsp canola oil
1 can (16-oz) diced tomatoes
1 tsp instant chicken bouillon granules
1 tsp marjoram
1 tsp salt
1/2 tsp thyme
dash of pepper
1 can (3-oz) chopped mushrooms, drained
1/3 cup cold water
3 tbsp flour
Hot cooked rice for 6 to 8 servings.

In a large nonstick skillet, heat the oil; add the pork and onion. Cook until the meat is browned on all sides. Drain well and transfer to the crockpot or slow cooker.
In the same skillet combine the undrained tomatoes, bouillon granules, and spices. Stir mixture together, scraping browned bits from bottom of skillet. Pour the mixture over the pork in the cooker. Add lid to cooker and cook on low setting for 8 to 10 hours. Turn heat up to high. Drain the mushrooms and stir into the cooker. Slowly blend the cold water into the flour until smooth; stir into the pork mixture. Cook, uncovered, on high setting until thickened, around 15 minutes. Stir occasionally.

To serve, place the pork mixture over the hot cooked rice. Sprinkle with some chopped parsley for garnish, if desired.

HAM AND LIMA BEANS

1 lb dry lima beans (soaked overnight in water)
1 large onion, chopped
1 large green bell pepper, finely chopped
1 tsp dry mustard
1 tsp salt
1 tsp freshly ground black pepper
1/2 lb cubed cooked ham
1 cup water
1 can tomato soup

Drain the beans and place in the crockpot or slow cooker.  Add the remaining ingredients and stir together to mix well.  Place lid on cooker and cook on low setting 8 to 10 hours or on high setting 4 to 5 hours.

May I suggest serving these beans with a piece of hot buttered cornbread?  Yummy!

PORK STEAKS WITH PEACHES

4 pork steaks, approx 1/2-inch thick 
1 1/2 tbsp canola oil
3/4 tsp basil
1/4 tsp salt
1 can (16-oz) peach slices
2 tbsp vinegar
1 tbsp instant beef bouillon granules
Hot cooked rice
1/4 cup cold water
2 tbsp cornstarch

Trim any excess fat from the pork steaks. Heat the canola oil in large skillet and brown the steaks on both sides in the skillet. Sprinkle the basil, salt, and pepper onto the steaks.

Drain the peach slices; reserve the syrup. Place the peach slices in the crockpot or slow cooker. Place the steaks atop the peaches.

Combine the reserved peach syrup, vinegar, and bouillon granules and pour the mixture over the steaks. Add the lid to the cooker and cook on low setting for approximately 8 hours.

On a warm serving platter, arrange the steaks and peaches over the hot cooked rice and keep warm.

Skim excess fat from cooking liquid. In a saucepan, blend the cold water into the cornstarch until smooth then stir in the hot liquid. Cook and stir until thickened and bubbly. Serve the gravy with the steaks.

Yield: 4 servings

CAJUN-STYLE COUNTRY RIBS

2 cups baby carrots
1 large yellow onion, coarsely chopped
1 large green bell pepper, cut into 1-inch pieces
1 large red bell pepper, cut into 1-inch pieces
2 tsp minced garlic
2 tbsp Cajun seasoning, divided
4 lbs country-style pork ribs
1 can stewed tomatoes, do not drain
2 tbsp water
1 tbsp cornstarch
Hot rice for serving, optional

Combine carrots, onion, bell peppers, garlic and 2 teaspoons of the Cajun seasoning in a 5 or 6-quart slow cooker; mix well.

Trim any excess fat from ribs. Sprinkle 1 tablespoon of the Cajun seasoning over the ribs and add to the cooker. Pour tomatoes with their juice over the ribs.

Place lid on cooker and cook on low 6 to 8 hours until ribs are tender.

Remove meat and veggies from the cooker to a serving platter.

Allow juices in cooker to set for 5 minutes for the fat to rise; skim off fat.

Blend the water, cornstarch, and remaining Cajun seasoning in a small bowl until smooth; stir into the liquid in cooker. Cook, without lid, on high for 15-30 minutes until sauce is thickened.

Return meat and veggies to the cooker and stir carefully to coat with the liquid.

Serve over hot rice, if desired.

Yield: 6 to 8 servings.

PORK CHOPS WITH MUSHROOMS AND POTATOES

1 can cream of mushroom soup
1 can golden mushroom soup
1 pkt (1-oz) onion mushroom soup mix
1 tbsp Worcestershire sauce
1/2 cup water
1 medium to large yellow onion, sliced
3/4 lb fresh mushrooms, sliced
4 medium to large potatoes halved or quartered depending on size
4 large bone-in pork chops

In a slow cooker, combine the soups, soup mix, Worcestershire sauce and water; stir with a whisk to blend.

Add the onion, mushrooms and potatoes, stir into the mixture.

Place the chops on the veggies and turn to coat with the soup mixture.

Place lid on cooker and cook on low 6 to 7 hours.

To serve, spoon the 'gravy' mixture over the chops.

Yield: 4 servings.

KEVIN BRYANT'S SLOW COOKER PORK CHOPS

BEST PORK CHOPS EVER!! I KNOW because I have made this recipe a dozen or more times!!

In crock pot layer pork chops, add a can of cream of chicken soup, then sprinkle dry Ranch dressing all over.
Cover and cook on high for 4 hours OR Low for 6 hours.
The pork chops come out very tender and the flavor is amazing! You also get a good gravy for mashed potatoes
DO NOT ADD ANY WATER!!

PERFECT PORK CHOPS

4 small onions

4 (3/4-inch thick) boneless, center loin pork chops

1 tbsp hot olive oil

1/2 tsp fresh ground black pepper

2 chicken bouillon cubes 1/2 cup boiling water

1/4 cup prepared mustard with white wine

Cut off ends of onions and peel. Cut onions in half crosswise to make 4 thick wheels. Place the onion wheels in the bottom of a slow cooker.

Sear both sides of the chops in hot olive oil in a heavy skillet, about 2 to 3 minutes on each side. Place in cooker on top of onions. Sprinkle with the pepper.

Dissolve bouillon cubes in boiling water. Stir in mustard. Pour into the slow cooker. Place lid on cooker and cook on high 3 hours or until the pork is cooked through and the onions are tender.

HAM BALLS

3 large eggs
3 cups crushed graham crackers
2 cups milk
2 tsp dried minced onion
1/4 tsp black pepper
2 lbs extra-lean ground ham
1 1/2 lbs lean ground beef
1 1/2 lbs ground pork that has been trimmed of fat
nonstick cooking spray

Beat eggs slightly in a large mixing bowl.  Add the crushed crackers, milk, onion, pepper, and ground meats; mix well.

Form the mixture into 24 balls, using 1/2 cup for each ball.

Make the TOPPING:
1/2 cup ketchup
1/4 cup water
1/2 cup brown sugar
1/4 cup + 2 tbsp vinegar
1/2 tsp dry mustard

Combine all the topping ingredients in a small bowl until well mixed.

Layer the meatballs in a lightly sprayed 6-quart slow cooker or crock pot.  Pour topping over the meatballs.
Do this in layers, meatballs, topping, meatballs, topping if necessary.

Place lid on cooker and cook on high for 1 hour.  Reduce the heat to low and continue to cook 3 to 4 hours until meatballs are cooked through.

BALSAMIC GLAZED PORK TENDERLOIN

2 pork tenderloins, approximately 3 lbs total
2 tsp ground sage
1 tsp salt
1/2 tsp ground black pepper
3 garlic cloves, pressed
1 cup water, divided
1/2 cup brown sugar
1 tbsp cornstarch
1/4 cup balsamic vinegar
2 tbsp soy sauce

Lay the tenderloins in the bottom of a large crockpot or slow cooker; rub with the sage, salt, pepper.  Pour half the water in the bottom of the cooker; add the pressed garlic. Place lid on cooker and cook on low for 6 hours.
In a small microwave-safe bowl combine the remaining water, brown sugar, cornstarch, vinegar, and soy sauce.  Cook on high for one minute; whisk and cook another minute or until thickened.   Pour half the mixture over the tenderloins and continue cooking for another hour or two.

Before serving, warm the remaining glaze and serve with the tenderloin.

BBQ RIBEYE CHOPS

This is a recipe I got from Pinterest and transferred here to my own recipe file.  Perhaps you would enjoy it, too. Note: This is pork, not beef.

3 1/2    pounds    beef, ribeye petite roast/filet 
1    cup    barbecue sauce ( I love Sweet Baby Rays ) 
1/2    cup    ketchup 
2    tablespoon    red wine vinegar 
1/4    cup    brown sugar 
1    teaspoon    liquid smoke ( optional ) 
   to taste    garlic powder 
   to taste    onion salt 
   to taste    black pepper 
   to taste    red pepper flakes ( if you want it spicy (optional) ) 


Season the pork with garlic powder, onion salt, and pepper.
Mix the barbecue sauce, ketchup, vinegar, brown sugar, liquid smoke, and pepper flakes together in a seperate bowl.  Layer the pork chops in your slow cooker, making sure to put the sauce on each chop as you go.  Cover and cook on low for 6 hours.  The meat should fall to pieces nicely!

FIESTA PORK SANDWICHES

1 (3 to 4-lb) boneless pork shoulder roast
1/3 cup lime juice
2 tbsp grapefruit juice
2 tbsp water
1 bay leaf
6 garlic cloves, minced
1/2 tsp salt
1/2 tsp oregano
1/2 tsp chili powder
2 tbsp olive or canola oil
1 large onion, thinly sliced
12 to 14 sandwich rolls, split

Cut roast in half and pierce several times with a fork.  Place in a large resealable plastic bag.  In a bowl combine the lime juice, grapefruit juice, water, bay leaf, garlic, salt, oregano, and chili powder; pour over the meat in the bag.  Refrigerate overnight, turning occasionally.  Drain, reserving marinade.

Heat oil in a large skillet over medium heat. Add the roast and brown on all sides.

Place the onion in bottom of crock pot or slow cooker, top with roast and pour marinade overall.

Place lid on cooker and cook on high setting for two hours.  Reduce heat to low and cook an additional 6 to 8 hours until the meat is tender and cooked through.

Remove meat from cooker and shred.

Discard the bay leaf and skim fat from cooking juices.  Transfer juices to a saucepan and bring to a rolling boil.

Serve the meat on the sandwich rolls accompanied by the juice as a dipping sauce.
Yield: 12 sandwiches

SCOTT'S CROCK POT PORK CHOPS

(I have no idea who Scott is.)

4 to 6 bone-in pork chops
salt and pepper
flour for dredging
1 1/2 tbsp canola oil
1 can cream of celery soup
1/2 soup can of water
3 tbsp catsup
1 tbsp Worcestershire sauce
1 small onion, chopped

Sprinkle chops with salt and pepper; dredge in flour.

Heat oil in large skillet and brown chops on both sides; remove to crock pot or slow cooker.

Mix the remaining ingredients together and pour over the chops.

Cook on high for 1 hour then on low for 5 - 6 hours or on low for 8 hours.

DR. PEPPER PULLED PORK

2 1/2-3 lb pork butt (also known as a pork shoulder)
24 oz. (2 cans) Dr. Pepper
1 medium onion, cut in quarters and then again in half
2 garlic cloves, minced
1 1/2 teaspoons dry ground mustard
1/4 teaspoon cayenne pepper
Salt and black pepper to taste
1/4 cup apple cider vinegar
3 tablespoons Worcestershire Sauce
Barbecue Sauce of choice

Place the chopped onions in the bottom of the slow cooker. Place the pork butt on top of the onions and add the garlic, ground mustard, cayenne pepper, salt, pepper, apple cider vinegar and Worcestershire sauce. Pour the Dr. Pepper on top and cook on high for 4-5 hours (or on low for 8 hours).

Very carefully, because the pork will be hot, remove the meat from the slow cooker and place on a large cutting board. Using two forks, shred the pork by pulling away from each other. The meat should be very tender by this point. Place the shredded pork back into the slow cooker and continue to cook for an additional hour.

Drain the remaining juices and toss the meat and onion mixture in the barbecue sauce of choice. I don't have an exact amount listed-just add a bit at a time until you get to your desired sauciness!

RANCH HOUSE CROCK POT PORK CHOPS WITH PARMESAN MASHED POTATOES

I saw this today on a friend's facebook page.  It sounds good so I am going to try it and I thought some of you might like it, too.  Being diabetic I will leave off the mashed potatoes (no doubt the best part!).

6 pork chops, 1/2 inch thick
1 packet dry Ranch Dressing Seasoning
10 oz can Cream of Chicken Soup
4 lbs peeled, cubed potatoes
5 Tablespoons real butter
1 cup fresh grated Parmesan cheese
6 cloves roasted garlic (directions are below)
1- 1 1/2 Cups warm skim milk (any milk will do, I used skim)
1 Tablespoon salt, or to taste
1 teaspoon fresh cracked black pepper, or to taste

Place pork chops, Ranch seasoning and soup into a medium sized crock pot over high heat for 4 hours or low heat for 6 hours.
Place potatoes into a large pot of cold water. Place onto stove top over high heat and bring to a boil. Once water is boiling, cook for 10-12 minutes or until potatoes are fork tender. Drain and transfer to the work bowl of a stand or electric mixer. Mix on low until potatoes are mashed then add butter, Parmesan, garlic, milk, salt and pepper. Season to taste if needed. For thinner mashed potatoes add more milk, slowly until your desired consistency.
Scoop mashed potatoes onto serving plates and top with pork chops and soup gravy from crock pot. I put a little parsley on top to serve.

Roasted Garlic

Preheat oven to 350 degrees F. Place bulb of garlic with skins on, wrap lightly in tin foil and bake for 1 hour. Remove from foil and let cool for 15 minutes. Remove garlic from skins, place in a bowl and mash with a fork until completely mashed. Set aside. One garlic bulb will have around 12 cloves.

EASY PREP BARBECUED RIBS

4 lbs baby back pork ribs

1/2 cup brown sugar

12-oz jar chili sauce

1/4 cup balsamic vinegar

2 tbsp Worcestershire sauce

2 tbsp Dijon mustard

1 tsp hot sauce

To ease cleanup, use a liner in the slow cooker.

Cut each slab of ribs into 2 sections. Place ribs in the slow cooker.

Combine the remaining ingredients and pour half over the ribs. Refrigerate the remaining sauce.

Cover ribs and cook on high 1 hour and then on low 6 to 8 hours.

Heat the refrigerated sauce and serve with the ribs.

PORK CHOPS AND SAUERKRAUT

4 pork chops, 1/2-inch thick
1 tbsp canola oil
1 can sauerkraut with caraway seeds, drained
1/2 cup sour cream
1 tsp paprika

Heat the canola oil in a large skillet over medium-high heat; brown the pork chops on both sides. 

Remove chops from skillet and place in slow cooker or crockpot.  Top with the sauerkraut and sprinkle paprika over all.  Place lid on cooker and cook on low for 6 to 8 hours.

About 30 minutes before end of cooking time, add the sour cream.

Yield: 4 servings

EASY SLOW COOKER HAM

2 cups packed brown sugar
1 (about 8 lb) bone-in picnic ham
1 can (6-oz) crushed pineapple, optional
Pineapple rings for serving, if desired

Place 1 1/2 cups of the brown sugar over the bottom to a slow cooker/crockpot.  Place the ham over the brown sugar, flat side down.  Trim bottom a little if needed to be able to fit lid over cooker.

Using your hands, rub the remaining brown sugar all over the ham.  Add the pineapple, if using.

Place lid on cooker and cook on low for 8 hours.  (This time is for a picnic ham.  It is too long for a spiral sliced ham!)

SPARERIBS & SAUERKRAUT

3 - 4 lbs lean pork spareribs, cut into serving-size pieces
salt to your taste
pepper to your taste
2 cans sauerkraut
1 onion, thinly sliced
1 apple, quartered, cored, sliced
1 tsp caraway seeds
1 cup water
1 tsp salt, optional

Sprinkle the salt and pepper to taste on the spareribs and brown ribs in a heavy skillet or the broiler.  Layer half of each of the following; ribs, sauerkraut, onion, and apple.  Repeat with the remaining half.
Add the caraway seeds to the water with additional salt, if using, and pour over the layers.  Cover and cook on low setting for 6 to 8 hours or on high for about 4 hours.

EASY SOUTHERN BRUNSWICK STEW

2 to 3 lbs pork butt

17-oz can white whole-kernel corn, undrained

14-oz bottle ketchup

2 cups diced cooked potatoes

1 lb pkg frozen green peas

2 cans (10 1/2-oz) tomato soup

2 tsp hot sauce

1 tsp salt

1 tsp pepper

Place pork in a slow cooker. Cover and cook on high 1 hour; turn heat to low and cook another 4 to 6 hours. Remove meat from the bone and shred, Discard the juices.

Combine all ingredients in the slow cooker, cover and bring to a boil on high. Reduce heat to low and cook another 30 minutes.

Yield: 10 to 12 servings
